Agave Mexicano is a rarer and lesser-known cousin of Espadin, and the plants used here have matured for a full decade before harvest, developing layers of complexity seldom found in mass-produced mezcal. The traditional production process honors the spirit of the Oaxacan heartland: agaves are cooked underground in a river rock-lined concave pit oven fueled by oak wood, tahona crushed, fermented in open pine wood tubs, and double distilled in alembic copper stills. Every step reflects the living culture of mezcal craft.
